About Campus Dining, Inc.

Campus Dining, Inc., began as a division of Corporate Dining, Inc. in 1992 and was incorporated in 2003 in order to develop and expand the research activities of FoodMark® in college and university Dining Services throughout the United States.

Campus Dining, Inc.’s project managers are all former Dining Service operators. We have operated at all levels from utility, back-of-the-house, up and through unit and regional management. Having worked “in the trenches” provides the skills to easily communicate with your staff and verify site conditions, operating statements, and subsidy.

Leaders are learners and teachers. We actively seek leadership roles in our industry as well as involvement in the development of new management methods, tools, and practices. A few of the Dining Service industry leadership positions (current or past) held by Campus Dining, Inc. professionals are:

  • 2008 SFM Leadership Award
  • 2007 SFM Spirit Award
  • President (two), Executive Committee, and/or Board Members (three) of the Society for Foodservice Management

Our People

Tom Newcomb


THOMAS D. NEWCOMB
President, Campus Dining, Inc.

Tom has spent his entire professional career in the hospitality industry. After graduating from Denison University, he joined the Stouffer's Food Corporation and worked his way from an hourly employee to corporate regional management.

As the founder of Campus Dining, Inc. and Corporate Dining, Inc., Tom focuses on committing to projects where the team relationship will provide long-term strategic benefits for the clients. This represents over eighty projects per year.

Pioneering the confidential data sharing of campus and corporate Dining Service liaisons through the nationally recognized FoodMark® program, Tom has brought together over 140 colleges and universities such as Boston College, Clemson, Wayne State, Harvard University, University of Alabama, Cornell, UCONN, College of the Holy Cross, University of Central Florida, University of Rochester, University of Notre Dame, Franciscan University, University of North Carolina, Gettysburg, and Providence College.

Tom is a member of NACUFS, NACAS, NACUBO, American Society for Quality Control (ASQC), and The Society for Foodservice Management (SFM). He is a past member of the Board of Directors for the SFM. Tom speaks nationally and internationally on the Process of Benchmarking at events such as the Annual Conference of the Food Service Consultants Society, NACAS, NACUFS, International Facilities Managers Society World Workplace, SFM Annual Conference, and Best Practice and FoodMark® Workshops.

Tom is the recipient of the 2008 SFM Leadership Award.

Barbara Clemens


BARBARA CLEMENS
Office Director/Administrator FoodWrite

Barbara began her career as a legal secretary working in private law. She moved to Dallas, Texas to work for the Sheraton Corporation as Administrative Assistant to the Controller. She left to join the Government/Business Affairs Department at Dresser Industries Corporate Headquarters in Dallas, where she was responsible for assembling and compiling data for export trade licenses, S.I.C. Codes, boycotts, anti-trust, environmental matters, and mergers and acquisitions.

Barbara went to work for Honda Manufacturing International in Marysville, Ohio, where she worked in Purchasing and moved to the PC Section supporting all aspects of PC's for the Marysville Plant. Some of her functions related to hardware equipment and software included: project management; identifying technology to meet corporate needs; testing, purchasing and implementing new software; department budgeting; teaching software classes; support; and developing standards and procedures.

Barbara joined Corporate Dining, Inc. and Campus Dining, Inc. in 1998. Her current role includes the development of surveys, assisting with the development of RFP's, providing project and documentation support, and office administration.

Some of the college and university projects she has worked on include University of Toledo, John Carroll University, Ohio University, The College of the Holy Cross, Notre Dame University, University of Central Florida and Duke University .

Jim Dabrowski

JIM DABROWSKI
Project Manager

Jim is a graduate of the Culinary Institute of America and holds a B.A. in Business Management from Baldwin-Wallace College in Berea, Ohio. After several years as a Chef, he focused his career towards management, joining the Marriott Corporation in the Corporate Services division. Jim worked in the Midwest as General Manager of Corporate Accounts, with clients including Ashland Oil, Inc, in Ashland Ky., NCR Technical Training Center, Dayton, Ohio, and the Museum of Science and Industry in Chicago, Illinois. He also directed a self-operated food service program at Westfield Group in Westfield Center, Ohio.

Jim developed his interest in College and University Dining as General Manager of the Kent State University Stark Campus Conference Center. He currently serves as the Director of Event Services and Campus Dining at Lakeland Community College in Kirtland, Ohio. Jim is a FoodMark® Champion with Campus Dining, Inc.
